Growth at this elevation occurs over a longer period of time, allowing for a more developed flavor profile. 

These beans are expertly roasted to a level on the lower end of the medium roast spectrum. A strong chocolate aroma is present from the moment the bag is open. The roast is just dark enough to accentuate chocolate and nutty notes, but still light enough to retain the character of the El Cedral single origin.
