The Background
The Chiapas region is located in southern Mexico, near the Guatemalan border. Unsurprisingly, Chiapas coffee beans share traits with Guatemlan beans. Oakland Coffee Works partners with a number of small farms, exercising sustainable, organic practices. Oakland Coffee Works gives back to the communities of Central & South American via their charity, Fueled By Love. Their charitable efforts have helped to provide schooling and emergency services to those in need. The word "Guapa" means beautiful. Although it would perhaps be strange to describe coffee as beautiful, the positive difference that a charitable roaster can have certainly is.
What makes Mexican Chiapas Coffee special?
Mexican Chiapas coffee is often compared to fine Guatemalan coffee in terms of complexity. This is a compliment, as Guatemalan coffee is quite highly reputed in the global coffee community. This medium roast has a light, almost delicate mouthfeel to it. A rich aroma of chocolate hints at the flavor profile, while a crisp, distinct acidity distinguishes the cup. Despite the complexity, and the balancing of many different aspects, this coffee remains light from start to finish. Experienced coffee drinkers are likely to appreciate the intricacies of this one!
